Mix together all marinade ingredients until combined. Then add chicken thighs to marinade, mix to coat chicken thighs and then set aside.
In a separate bowl, mix together all ingredients for the Zingy Chipotle Sauce, then set aside.
Heat a cast iron pan or non-stick skillet until hot, then add chicken thighs. Cook for 5 mins, stirring and flipping regularly, then add onion. Continue to cook for 5-10 mins, until chicken thighs are charred and onion begins to caramelise.
To build tacos, heat mini tortilla until pliable, then spread tsp of Zingy Chipotle Sauce across tortilla, add chicken thighs and onion, hot sauce, coriander, along with cheddar and mozzarella. If you want to fry tacos and melt your cheese, fold over tortilla to create a quesadilla, then fry in a pan until crispy and cheese is melted. If you don’t want to fry tacos, add lettuce and fold into a wrap, then enjoy!
