Butterfly your chicken breast, then cut each piece into very thin strips, then set aside. In a separate small bowl, mix together sauce ingredients until fully combined.
Meanwhile, make sure all your stir fry ingredients are chopped very thin and heat groundnut oil a large pan, on a high heat. Add chicken to pan, season with salt and pepper, and cook for 5 mins stirring constantly. Once chicken is cooked, remove form wok and set aside.
Add pepper, onion, carrot and garlic to wok and stir fry for 3-4 mins until soft. Add cooked chicken back to pan, along with chicken stock, mix until combined, then continue to simmer until chicken stock reduces. Once reduced, add chopped cabbage and stir fry until soft.
Bring a saucepan of water to boil and cook noodles according to packet instructions. Drain, then add cooked noodles, pak choi, baby corn to pan and stir to combine. Finally, add white pepper, Mirin and honey just to finish everything off and then it's ready to serve!

Ingredients

Serves 3

For the sauce:

  • 3 tbsp of Soy sauce.
  • Tbsp of Mirin.
  • Tbsp of sesame oil.
  • 1 tsp of brown sugar.
  • 200ml of chicken stock.
  • Tbsp of cornflour.

For the stir fry:

  • 300g of chicken breast - butterflied then cut into thin strips.
  • 1/4 of a white cabbage - thinly cut.
  • 2-3 carrots - thinly sliced.
  • 1 bell pepper - thinly sliced.
  • 1 small onion - thinly sliced.
  • 3-4 cloves of Garlic - thinly sliced.
  • 3-4 big leaves of pak choi - thinly sliced.
  • A handful of baby corn - chopped.
  • Tbsp of groundnut oil, for frying.
  • 4 nest of egg noodles - cooked according to packet instructions.
  • Tsp of ground white pepper.
  • Tbsp of Mirin.
  • Tbsp of honey (optional)
  • Spring onions - chopped.
