Alfredo Chicken & Broccoli Gnocchi Bake

Tasty chicken bites, soft gnocchi and chopped broccoli mixed into a delicious, cheesy and peppery Alfredo sauce, topped with a golden, baked crust of melted cheese. This an easy, one pan, comfort delight, perfect for cold winter days.

Preheat the oven to 200°C/ 180°C fan/ 400°F.
Butterfly the chicken breasts, then season all over with the all purpose seasoning.
Heat the oil in a large, oven-proof pan, sear the chicken over a high heat for 4-5 minutes on each side, until cooked through and showing a golden-brown colour, then remove from the pan and set aside.
In the same pan, sauté the onion, garlic and celery with the butter, over a medium heat for 5 minutes, stirring regularly, until soft. Add in the stock and cream, stir to combine and bring the pan to a low simmer. Stir through the cream cheese and parsley and let simmer for 10 minutes. Taste the sauce for seasoning - I recommend going big on the freshly ground black pepper!
Add the chopped broccoli and simmer gently for 3-4 minutes. Stir through the parmesan, chop the chicken into bite-sized pieces and transfer to the pan along with the gnocchi. Stir to combine then remove the heat - we don't really want to cook the gnocchi at this point.
Sprinkle over the mozzarella and parmesan and bake for 10 minutes. Then I place mine under the grill (broil), on a high heat, for 5 minutes to get a super golden crust of cheese. Serve immediately and enjoy!

Ingredients

Serves 4

For the gnocchi bake:

  • 400g chicken breast, 2 medium chicken breasts.
  • 2 tbsp All Purpose Chicken Seasoning.
  • Tbsp Extra Virgin Olive Oil.
  • 1 onion, finely chopped
  • 3 Clove of Garlic, crushed
  • 2 Celery Ribs, finely chopped.
  • 0.5 tbsp Unsalted Butter.
  • 0.5 tsp Salt.
  • 0.5 tsp Black Pepper, freshly ground.
  • 250ml Single Light Cream
  • 400ml of chicken stock.
  • 60g of Light Cream Cheese.
  • 4 tbsp Fresh Parsley, finely chopped.
  • 250g Broccoli, finely chopped.
  • 15g Parmesan, grated.
  • 500g Fresh Gnocchi

For the topping:

  • 80g Mozzarella, grated.
  • 15g parmesan, grated
