Chicken, Tomato and Basil Pasta

Heat olive oil in a large pan and add chicken. Season well and cook for 5 mins.
Add onion, pepper and garlic, stir well and continue to fry for 5 mins.
Once onions and pepper have softened, add chopped tomatoes, fill the empty tin halfway with water and add to the pan. Stir well, bring to a simmer and cook for 10 mins, stirring occasionally.
Meanwhile bring a large saucepan of water to boil, salt generously and add your pasta. Cook according to instructions on packet.
Back to your first pan. Add basil, red wine vinegar and oregano and season to taste. Continue to simmer down sauce, if it has reduced too much then add small amounts of water.
Once pasta is cooked, drain and combine sauce pasta. Garnish with parmesan and fresh basil.
