Crispy Chicken BBQ Tacos

Healthy, crispy, oven baked chicken tenders seasoned with taco seasoning, combined with a rich and tangy BBQ Mayo, melted cheese, onions and Jalapeños. Our Crispy Chicken BBQ Tacos are out of this world and super easy to make.

Preheat oven to 180°C/ 360°F.
In a large bowl, mix together taco seasoning and cornflour. Add egg whites to a bowl and panko breadcrumbs to a separate large bowl or plate. Dip each chicken tender in cornflour mixed with taco seasoning, then egg whites, then cornflour mixed with taco seasoning again and finally breadcrumbs. Transfer breadcrumbed chicken tenders to a lined baking tray, spray with a few sprays of low calorie cooking spray and bake for 20-25 mins, flipping once throughout cook time.
In a small bowl, mix together light mayonnaise, BBQ sauce and lime juice to make your BBQ mayo.
Once chicken tenders are cooked through and crispy, remove from oven and slice into 3-4 pieces per chicken tender.
To build your tacos, spread tsp of BBQ Mayo on mini tortilla, then add 3-4 pieces of chicken, along with low fat cheddar. Grill your tacos at this point for 2 mins, until cheese has melted, then top with a tiny bit more BBQ sauce, white onion, jalapeños and lettuce.

Ingredients

Serves 4

For the crispy chicken:

  • 300g of chicken tender fillets.
  • 50g of cornflour.
  • 100g of panic breadcrumbs.
  • 2 egg whites.
  • 1/2 a pack of taco seasoning.

BBQ Mayo:

  • 3 tbsp of light mayonnaise.
  • 3 tbsp of low-sugar BBQ sauce.
  • Juice of 1 lime.

For the rest:

  • 8 mini tortillas.
  • 80g of low fat cheddar - grated.
  • Lettuce - shredded.
  • 1 small white onion - finely chopped.
  • 2-3 jalapeños - deseeded, finely chopped
