Garlic Steak Bites, Spicy Potatoes and Cajun Peppercorn Sauce
This was the best dinner I’ve had in a long time! It’s a little bit indulgent but it’s still pretty healthy and high protein and lets not forget, bloody delicious!

Preheat oven to 200°C/ 400°F.
Bring a large saucepan of water to the boil and par boil the potatoes for 3-4 minutes. Drain the potatoes into a colander, then pour them out onto a baking tray and allow to cool completely, until no longer steaming.
Once cool, transfer the potatoes to a large bowl, add the olive oil, salt, pepper, smoked paprika, onion granules and chilli powder, then mix until the potatoes are coated. Line the baking tray with baking paper, spread the potatoes out onto the baking tray so they aren’t touching and bake for 25 minutes.
Season the steak bites with salt and pepper , then melt the butter in a pan. Sear the steak bites, on high heat, for 4 minutes, then remove from the pan. Sauté the garlic in the same pan for 1-2 minutes, until beginning to turn a darker colour, then add the steak bites back the pan and toss with the garlic, then remove and set aside.
Make the Cajun Peppercorn sauce. Add the beef stock and single cream, then stir to combine. Add the cajun seasoning and black pepper, then simmer the sauce for 5 minutes until thick.
Serve the steak bites with the potatoes and steamed greens. Pour the Cajun Peppercorn sauce over the steak bites just before eating.
