Grilled Feta Toast w/ Honey & Red Chilli

Feta on a tomato and crusty sourdough base, grilled then topped with honey and sliced red chilli for a kick. This is ready in 5 mins and is the perfect brunch recipe.

Preheat grill on medium heat and bring a medium saucepan to boil.
Add tomato sauce to sourdough and spread evenly, then crumble feta onto sourdough. Place under grill for 2-3 mins until feta is starting show colour, then remove from grill.
Meanwhile, add a splash of white wine vinegar to saucepan, stir to create a whirlpool and crack you egg into saucepan. Poach your egg for 2 mins, the whites should form into a ball shape to the whirlpool effect, then remove egg with a slotted and drain using a paper towel.
Add red chilli and drizzle honey over grilled feta, then add poached egg and drizzle chilli oil. Garnish with fresh chopped parsley.

  • 1 slice of Sourdough.
  • 3 tbsp of ready made tomato sauce or passata.
  • 30g of Feta.
  • 1 red chilli, deseeded or a pinch of chilli flakes.
  • Tsp of honey.
  • 1 egg.
  • 1/2 tsp of chilli oil.
  • Fresh parsley - finely chopped, to garnish.
