Our Pancetta & Mozzarella Orzo is an easy and hearty winter meal. A rich tomato and basil sauce, crispy pancetta and moreish orzo, all topped with stringy mozzarella cheese.

Ingredients
Serves 4
- 1/2 tbsp of extra virgin olive oil.
- 140g of diced pancetta.
- 300g of skinless, boneless chicken thighs.
- 1 sweet red pepper - finely chopped.
- 3 cloves of garlic - finely chopped
- 500g of passata.
- A pinch of chilli flakes.
- 2 tbsp of tomato puree.
- Tbsp of oregano.
- Tbsp of red wine vinegar.
- A handful of fresh basil - torn
- 250g of orzo
- 200g of mozzarella - torn into pieces.
- Salt and pepper, to taste.
