To a large mixing bowl, add all Mexican beef patty ingredients and mix until fully combined. Form you patty mixture into a large ball, then divide into four. Shape each 1/4 of mixture into 4 equally sized patties, then cover and set aside.
In a small bow, mix together chipotle-mayo ingredients until combined.
If you’re cooking burgers on a coal BBQ then light coals and leave 20 mins until coals are white and ready for use. For medium-rare, cook each burger 3-5 mins on each side, depending on heat of coals. 1 min before removing burger from BBQ, add Mexican cheese slices, close the lid on the BBQ and all cheese to melt onto patties, the remove form BBQ.

Serves 4

For the Mexican Beef Patty:

  • 500g of 5% fat beef mince.
  • Tsp of ground cumin.
  • Tsp of smoked paprika.
  • Tsp of garlic granules.
  • Tsp of onion granules.
  • 1/2 tsp of ground coriander.
  • 1/2 tsp of cayenne chilli powder.
  • 1 egg.
  • 30g of breadcrumbs.

For the Chipotle-Mayo:

  • 3 tbsp of light mayonnaise.
  • Juice of 1/2 a lime.
  • Tsp of chipotle paste.

For the burger:

  • 4 burger buns.
  • Fluffy leaf lettuce.
  • Whitworth’s Smoky Brazillian Beans
  • 1 large tomato - sliced.
  • 4 slices of Mexican cheese.
  • Finely chopped coriander, to garnish.
