BBQ Chicken Mac ‘n’ Cheese

Preheat grill on medium-high heat.
In a large mixing bowl, add all BBQ Chicken Thighs ingredients and mix until chicken thighs are coated. Lay out coated chicken thighs on a lined broiler pan, add a tiny bit more BBQ sauce to chicken thighs if you wish to create a thicker coat of BBQ sauce, then grill for 10-15 mins. Check and flip chicken thighs once or twice throughout cook time, as it’s very easy to burn under the grill.
For the Mac n Cheese, bring a large saucepan of salted water to boil and add macaroni. Cook for 6-7 mins, until al dente, then drain.
Meanwhile, heat a large pan on low heat. Melt butter, then add plain flour and whisk together to create a roux. Gradually whisk in semi-skimmed milk, adding a large splash of milk at a time, until none is left and you are left with a thick white sauce. Increase heat if you need a thicker sauce. Add BBQ seasoning, garlic granules and smoked paprika and stir to combine. Then, stir in light cheddar until melted, followed by cooked macaroni. Stir everything until combined, then you’re ready to serve.
If you want to grill your BBQ Chicken Mac n Cheese, then add Mac n Cheese to a single serve oven-proof dish, top with sliced BBQ chicken thighs and some grated cheese on top. Place under grill for 2-3 mins.
