Firstly, season your chicken breast generously and set aside. Heat butter on medium heat in large pan, until melted, then add garlic. Reduce heat to low and sauté garlic for 1-2 mins, until fragrant and just beginning to turn brown, then add plain flour. Stir vigorously to combine butter and plain flour, then gradually add and whisk milk until left with a smooth white sauce. Add onion granules, smoked paprika, a punch of salt and plenty of black pepper and stir to combine. Leave to gently simmer on low heat.
Whilst white sauce is simmering, heat olive oil in a separate pan and add chicken breast and pancetta. Cook for 5-10 mins, until chicken is cooked through and pancetta turning crispy. Add gnocchi straight to pan with chicken and pancetta and fry until gnocchi shows colour and starts to turn crispy.
Whilst gnocchi is cooking, add cheddar, mozzarella and parmesan to white sauce and stir on low heat until cheese has melted into white sauce. When it’s crispy, add gnocchi, chicken breast and pancetta and stir until combined.
Serve immediately. Garnish with chopped chives.

For the Cheesy Garlic Gnocchi w/ Pancetta:
- 25g of unsalted butter.
- 3 cloves of garlic - crushed.
- 2 tbsp of plain flour.
- 1 pint of semi-skimmed milk.
- Tsp of onion granules.
- Tsp of smoked paprika.
- Tbsp of extra virgin olive oil.
- 500g gnocchi.
- 200g of chicken breast. - diced (this is optional).
- 50g of pancetta - diced.
- 200g of chicken breast. - diced (this is optional).
- 60g of mature cheddar - grated.
- 20g of mozzarella - grated.
- 20g of parmesan - grated
- Chopped chives, to garnish.
