BBQ Chicken & Pepperoni Pizza

Preheat oven to 180℃ / 360℉. Add chicken breast to baking dish. Then add olive oil, salt, black pepper, BBQ seasoning and mix well. Bake for 20 mins.
Add self raising flour, greek yoghurt, salt, black pepper, garlic granules and dried parsley to a mixing bowl and mix until dough ball is formed. Use hands to make sure everything is combined well.
Once completely combined, roll out dough mixture onto a lightly floured surface and knead for 1-2 mins. If it’s too sticky and is sticking to surface, add small amounts of flour to mixture and continue to knead.
Using a rolling pin, roll out dough mixture into a circular shape. Use a knife to cut any excess trimmings off.
Remove chicken from oven and use to two forks to shred into small pieces.
Add all your pizza toppings to your dough base and bake for 10-12 mins. Enjoy!

For the bbq chicken:

  • 100g of chicken breast.
  • 1/2 tbsp of olive oil
  • Pinch of salt and black pepper.
  • Tbsp of bbq seasoning.

For the dough:

  • 90g of self raising flour.
  • 80g of 0% fat greek yoghurt.
  • Pinch of salt and black pepper.
  • Tsp of dried parsley.
  • Tsp of garlic granules.

For the toppings.

  • 3 tbsp of passata.
  • 20g of light cheddar.
  • 6 slices of pepperoni.
  • BBQ chicken peices.
  • 1/2 of a small green chilli, chopped.
  • 1/4 of a red pepper, finely chopped.
