Blueberry Pie Baked Oats

Delicious chewy oats on a bed of vibrant blueberries.

Preheat oven to 180°C/ 360°F. 
Heat a non-stick pan or saucepan on a medium heat and add your blueberries and water. Cook your blueberries for 10 mins, stirring regularly until they begin to break down. Mash your blueberries, add maple syrup and continue to cook until sauce thickens.
In a bowl, mix together oats, whey protein, salt and baking powder. Then add milk and maple syrup and mix until fully combined.
Add blueberry sauce to 4 small oven-proof ramekins or baking dishes, then top with oat mixture. Flatten, then decorate with blueberries and pecans, then bake for 12 mins.

For The Blueberry Sauce

  • 400g of blueberries.
  • 150ml of water.
  • Tbsp of maple syrup.

For The Oats

  • 200g of oats.
  • 2 scoops of vanilla impact whey protein.
  • 1/4 tsp of salt.
  • 1 tsp baking powder.
  • 300ml of milk.
  • Blueberries and pecans, to decorate.
