Buffalo Chicken Grilled Ciabatta

Preheat oven to 190°C/ 365°F.
Add chicken breast to a baking dish, coat with olive oil, cajun seasoning, oregano and buffalo sauce, then bake for 20-25 mins.
Meanwhile, in a bowl, combine light mayonnaise and garlic granules. Lay ciabatta flat, then slice horizontally, lengthways, then spread garlic mayonnaise onto ciabatta.
Preheat grill on medium.
Once chicken is cooked, remove from oven and transfer to a large bowl. Using a hand whisk, shred chicken in into fine strands, then season to taste with salt and pepper. If you wish to add more buffalo sauce, then do so and mix it in.
Spread shredded chicken onto ciabatta, then add a few splashes of buffalo sauce to ciabatta, followed by mozzarella slices and dried parsley. Transfer ciabatta to a baking tray then grill for 4-5 mins, until cheese has melted. Garnish with chopped chives and slice into 4.

Serves 4

For the chicken:

  • 2 small chicken breasts.
  • Tbsp of extra virgin olive oil.
  • Tbsp of cajun seasoning.
  • 1/2 tbsp of oregano.
  • Tbsp of buffalo sauce + 2 tbsp to drizzle on toast.

For the rest:

  • 2 tbsp of light mayonnaise.
  • Tsp of garlic granules.
  • 1 large ciabatta.
  • 4 slices of mozzarella.
  • A pinch of dried parsley.
  • A handful of chives - chopped.
