Cajun Tofu Fried Rice

This is a delicious, plant-based and high protein fusion of two cuisines. Crispy Cajun Tofu, stir fried with crunchy veg and tangy, slightly spicy rice. Topped with toasted peanuts.

Using your hands, break tofu up into bite-sized pieces, then add to a large bowl along with 1/2 tbsp of oil and tbsp of cajun seasoning. Mix to coat Tofu in cajun seasoning.
Heat remaining 1/2 tbsp of oil in a large non-stick pan or wok, on medium heat, then add tofu. Fry tofu for 5 mins, stirring occasionally, until tofu is showing colour and turning crispy, then remove from pan.
Add remaining tbsp of oil to pan and add bell peppers, onion and carrot. Fry for 5 mins, until vegetables begin to soften, then add long grain rice and stir to combine.
Add chilli jam, tomato puree, dark soy sauce, cajun seasoning and garlic granules to rice, along with fried cajun tofu. Increase heat to high and stir fry for 3-4 mins until sauces have reduced and soaked into rice. Stir in spring onions, red cabbage and season to taste before removing from heat.
Meanwhile, toast peanuts on medium heat for 2-3 mins, then chop and use as a garnish.

Ingredients

Serves 4

For the cajun tofu:

  • 400g of firm drained tofu.
  • Tbsp of groundnut oil.
  • 1-2 tbsp of cajun seasoning.

For the fried rice:

  • 2 bell pepper - diced.
  • 1 onion - finely chopped.
  • 1-2 carrots - chopped.
  • 500g of cooked, long grain rice (make sure rice is not hot).
  • 2 tbsp of tomato puree.
  • Tbsp of dark soy sauce.
  • 1/2 tbsp of cajun seasoning (or more if you wish).
  • Tsp of garlic granules.
  • 2 spring onions - thinly sliced horizontally.
  • 1/4 red cabbage - shredded by using a peeler.
  • 20g of peanuts.
