California Burrito

A California Burrito typically consists of steak and chips, we swapped the steak for chicken, but kept the chips (obviously), then we chucked in our zingy soured cream, guacamole, black beans and more to make something special. Each bite is pure joy!

Mix together chicken marinade ingredients in a large bowl, then add chicken thighs. Stir to coat chicken thighs, then cover and leave to marinade as long as you can (minimum 30 mins).
For the chips, peel and cut potatoes into thin chips. Add chips to a large saucepan of boiling water and par-boil for 5 mins. Drain chips and lay them out on a surface, allowing them to steam for a few mins, until chips are touch-dry. Heat oil in a pan until very hot, then chuck in your chips. Fry for 5-10 mins, stirring regularly until golden and crispy. Remove and drain with kitchen towel. Alternatively, you can bake your chips for 40 mins at 200°C/ 400°F, with 1 tbsp of oil, this will reduce calories and fat content.
Mix together all zingy soured cream ingredients until fully combined.
Heat a cast iron skillet (if you’re not using cast iron, you will need to add some oil), then add chicken thighs. Cook chicken thighs for roughly five mins each side, until showing colour and beginning to char. Once cooked, remove and slice into thin strips.
Time to build your burrito. Heat your tortilla wrap until pliable, spread zingy soured cream across the bottom, then chuck inchips, chicken thighs, guacamole, black beans, tomato, coriander and hot sauce and then wrap it up.

Ingredients

Serves 4

For The Chicken marinade:

  • 500g of boneless, skinless chicken thighs.
  • Tbsp of extra virgin olive oil.
  • Tsp of cumin.
  • Tsp of smoked paprika.
  • Tsp of garlic granules.
  • 1/2 tsp of chilli powder.
  • 1/2 tsp of ground coriander.
  • 2 tsp of chipotle paste.
  • 1/2 tsp of salt.
  • Juice of 1/2 a lime.

For The Chips:

  • 2 large Maris Piper potatoes.
  • Oil for frying. Alternatively you can own bake your chips with 1 tbsp of oil.
  • Salt and pepper, to taste.

For The Zingy Soured Cream:

  • 50ml of soured cream.
  • Tsp of smoked paprika.
  • A few dashes of hot sauce.
  • A small handful of first coriander -chopped

To Serve:

  • 4 tortilla wraps.
  • Chopped coriander.
  • Hot sauce.
  • 1-2 tomatoes - finely chopped.
  • Black beans (1 tbsp per burrito).
  • Guacamole (1 tbsp of per burrito).
