Chipotle Chicken Flatbreads

Preheat oven to 200°C/ 400°F.
Place the chicken breasts in a large baking dish. Add olive oil, salt, pepper, garlic granules, onion granules, oregano, smoked paprika and chipotle paste to chicken and mix until fully coated. Bake for 25-30 minutes.
Meanwhile, add light mayo, chipotle paste and fresh lime to a bowl, mix until fully combined.
Allow chicken to rest for 3 minutes then slice chicken into thin slices.
Add smokey chipotle mayo to each side of the flatbread. Then add lettuce, chipotle chicken and pickled red onions.

For the chicken:

  • Tbsp of olive oil.
  • 500g of chicken breast.
  • Tbsp of garlic granules.
  • Tbsp of onion granules.
  • Tbsp of oregano.
  • Tbsp of chipotle paste.
  • Seasoning.

For the smokey chipotle mayo:

  • 4tbsp of light mayo.
  • Tbsp of chipotle paste.
  • Fresh lime juice - half of a lime.

The rest:

  • 4 flatbreads.
  • Lettuce leaves - chopped.
  • Pickled red onions.
