Carrot Cake Baked Oats

These Carrot Cake Baked Oats are delicious and nutritious! This is a healthy take on the classic Carrot Cake, with protein in the mixture and the frosting, the oats come out moist and chewy with a comforting flavour profile.

Preheat oven to 175°C/ 350°F
In a large bowl, mix together all carrot cake ingredients, except carrot, until fully combined. Before adding grated carrot to bowl, squeeze out any excess carrot juice, then add to bowl and combine once more.
Transfer mixture to a lined 8”x8” baking tray and bake for 30 mins. Once baked, remove from oven and leave to cool.
Whisk together protein icing ingredients and then spread evenly onto carrot cake bars, then top with chopped walnuts. Slice into 12 bars.

For the carrot cake:

  • 2 bananas.
  • 2 carrots - grated.
  • 175g of oats.
  • Tbsp of almond butter.
  • 100g of honey.
  • 115ml of milk.
  • Scoop of vanilla protein.
  • Tsp of cinnamon
  • Tsp of vanilla extract.
  • 1 & 1/2 tsp of baking powder.
  • 2 tbsp of chopped walnuts - to top.

For the protein icing:

  • 150g of light cream cheese.
  • 2 scoops of vanilla protein.
  • Tsp of vanilla extract.
