Chicken Chorizo Mac ‘N’ Cheese

Nothing shouts cosy night in like a good ol' Mac N Cheese with Chicken and Chorizo thrown in!

Heat olive oil in a large pan on a medium and add your chicken breast. Season lightly and cook for 5 mins until no longer pink. Once cooked, move to one side of your pan and add chorizo slices.
Leave to fry for 2 mins without touching, the chorizo will start to release its oils, then stir in with the chicken and fry for another 2 mins, until the chorizo starts to go crispy.
Add your red pepper and garlic, stir well and continue to fry until pepper softens.
Remove everything from your pan and set aside, do not clean or start with a fresh pan!
Get a saucepan on and cook your pasta now.
Now, add flour and smoked paprika to the pan, whisk together and then begin to whisk milk into your flour/paprika mixture on a low heat until the full pint is used.
Whisk away any lumps until you are left with a thick and smooth sauce.
Add your cheddar to the sauce and stir until melted. Then, add your cooked pasta to the pan, with your chicken, chorizo and red pepper and mix everything together.
Garnish with basil and parmesan.

  • 100g of chorizo - thinly sliced.
  • Tbsp of extra virgin olive oil.
  • 300g of chicken breast - cut into thin strips
  • Salt and pepper, to season.
  • 1 sweet red pepper - thinly sliced.
  • 2 cloves of garlic - crushed.
  • 2 tbsp of flour.
  • Tbsp of smoked paprika.
  • 1 pint of semi-skimmed milk.
  • 100g of light cheddar - grated.
  • 300g of macaroni or spiralli pasta.
  • Chopped basil and grated parmesan, to serve.
