Preheat oven to 200°C/ 400°F.
Bash your chicken breast until 1 inch thick. Dip chicken breast in flour, egg, flour, egg then pan breadcrumbs. Make sure chicken breast is coated in breadcrumbs and then set aside.
Mix together all slaw ingredients. In a separate bowl, mix together katsu mayo ingredients until combined and set aside.
Heat tbsp of olive oil in non-stick pan and fry chicken breast for 2-3 mins on each side until breadcrumbs turn golden brown. Transfer chicken breast to a baking tray and bake for 15-20 mins, until chicken is cooked through.
Once baked, lightly toast Artisan loaf and then assemble sandwich.
