Chimichurri Steak Flatbreads

Layer on layer of flavour! Tender slices of steak, roasted vegetables, served with an incredible chimichurri sauce. A colourful and flavourful addition to the ultimate flatbread!

Preheat oven to 180°C/ 350°F.
Add pepper and red onion to a baking tray, drizzle with tbsp of coconut oil, season with salt, pepper and oregano and bake for 20 mins.
Add all chimichurri ingredients to a small bowl and mix together well.
Heat tbsp of coconut oil in a cast iron pan, wait until the oil is smoking and add your steak. Leave to fry for 3-4 mins before flipping and cooking for another 3-4 mins.
Remove and leave your steak to rest for a few mins and then thinly slice.
Now build your flatbreads. Heat your flatbreads in the oven for 1 min, add mixed salad, then roast veg, steak slices and top with chimichurri sauce.

For the Steak:

  • 2 pepper - chopped.
  • 1 red onion - chopped.
  • 2 tbsp of coconut oil.
  • Tbsp of oregano.
  • 200g sirloin steak.

For the Chimichurri:

  • A small bunch of coriander - very finely chopped.
  • A small bunch of parsley - very finely chopped.
  • 1 green chilli - deseeded and finely chopped.
  • 3 tbsp of extra virgin olive oil.
  • 2 tbsp of white wine vinegar.
  • A pinch of salt.
  • 2-3 tbsp of onion - finely chopped.
  • 2 small cloves of garlic - finely chopped.

To Serve:

  • 4 flatbreads.
  • Mixed salad.
