Grilled Peri Peri Chicken and Halloumi Sandwich

Butterfly your chicken breast, cover with cling film and bash with a rolling pin, hammer or anything you can find in your house which is good for whacking.
Transfer the chicken breast to a bowl and coat with peri peri sauce (found in our recipes). Leave to marinade for at least 30 mins.
Heat a cast iron griddle or non-stick pan, spray with a little cooking spray and add chicken breast. Cook for 3-4 mins each side and remove from heat.
Heat another griddle or pan, spray with a little cooking spray and add halloumi. Fry for 3 mins each side.
To make peri peri mayonnaise, mix together mayonnaise and peri peri sauce.
Now time to build your sandwich! Lightly toast your bead, spread your peri peri mayonnaise, add lettuce, cucumber, chicken breast, relish, tomato slice and then grilled halloumi.

For the Chicken

  • 2 chicken breasts
  • 3 tbsp of our homemade peri peri sauce (found in 'Our Recipes')
  • 4 slices of halloumi

For The Peri Peri Mayonnaise

  • 2 tbsp of light mayonnaise
  • Tsp of peri peri sauce

To Build The Sandwich

  • 4 thick slices of white bread
  • Lettuce
  • Tomato sliced
  • Cucumber - cut into thick, short strips
  • 2 tsp of relish or chilli jam
