Cover and bash chicken breasts to 2cm thickness, then coat all over with cayenne pepper, garlic granules, onion granules and salt and pepper.
Heat olive oil in a large pan and cook chicken breast, on medium-low, 4 mins on each side, then pop in the oven 190°C/ 365°F, until cooked through (roughly 5-10 mins)
Bring a large saucepan of salted water to boil and cook pasta until al dente.
To the same pan as chicken, melt light butter, then whisk in plain flour 1 tbsp at a time, then gradually whisk in semi-skimmed milk until fully combined with no lumps. Stir in chipotle paste, onion granules, garlic granules and cayenne pepper, followed by light cheddar. Drain then add pasta - use pasta water to loosen if needed. Season to taste and you’re ready to serve.
Slice, then serve chicken breast on top - garnish with red chillies and dried parsley.

Serves 3

For the chicken breast:

  • 2 medium chicken breasts.
  • Tsp of cayenne pepper.
  • Tsp of garlic granules.
  • Tsp of garlic granules.
  • A pinch of oregano.
  • Salt and pepper, to taste.
  • Tbsp of extra virgin olive oil.

For the Mac n cheese:

  • 125g of macaroni or spiralli pasta.
  • 30g of light butter, such as Lurpack.
  • 3 tbsp of plain flour.
  • 1 pint of semi-skimmed milk - heated in microwave for 45 seconds.
  • 1 tbsp & 1/2 of chipotle paste.
  • Tsp of onion granules.
  • Tsp of garlic granules.
  • 1/2 tsp of cayenne pepper.
  • 100g of light cheddar - grated.
  • Red chillies - thinly sliced, to garnish.
  • Dried parsley, to garnish.
