Heat olive oil in a non-stick pan, then add onion. Cook onion for 5-10 mins until soft and turning brown and crispy.
Meanwhile, in a small bowl, mix together your fajita seasoning mix.
Once onions are cooked, add orzo to pan, with 2 tbsp of fajita seasoning. Stir well and toast the orzo and spices for 1-2 mins, before adding semi-skimmed milk. Stir everything together well and reduce heat so pan is on a low simmer. As the orzo cooks and soaks up the liquid, it may go dry, you can add splashes of milk or water to loosen it up again. Make sure the orzo doesn't burn or stick to the pan by stirring regularly. It should take approx 10 mins for orzo to cook.
Meanwhile, place chicken breast in a bowl, add tbsp of olive oil and 2 tbsp of fajita seasoning to chicken and mix to coat chicken. Once chicken is coated, heat cast iron griddle until very hot and add chicken. Cook for 3-4 mins, once the chicken is showing charred marks, flip it and cook for another 3-4 mins. Once chicken is cooked, remove from pan and add peppers. Fry peppers for 5 mins, until soft and slightly charred.
Once orzo is cooked, add cooked peppers and coriander and stir until combined. Season orzo to taste, then you're ready to serve! Just add chicken on top and some fresh coriander to garnish.
