Firstly, make sure you chop your veg and get your pasta on to cook, make sure your reserve some pasta water when draining.
Heat olive oil in non-stick pan on medium heat and add chicken. Fry for 4-5 mins until cooked through. Add red onion and sweet red pepper and continue to cook for 3-4 mins before adding pesto. Stir the pesto until combined and add cooked pasta.
Stir well, add light cream cheese and a few ladles of pasta water and continue to stir until creamy. Add fresh basil, chopped cherry tomatoes and chilli flakes and give it a final stir.
Garnish with chopped basil and grated parmesan.

- Tbsp of extra virgin olive oil.
- 400g of chicken breast - diced.
- 1 red onion - finely chopped.
- 1 sweet red pepper - finely chopped.
- 2-3 of tbsp pesto.
- 300g of penne pasta - cooked. (Weighs 300g when uncooked)
- 2 heaped tbsp of light cream cheese.
- A handful of cherry tomatoes - chopped in half.
- A handful of fresh basil - chopped.
