Garlic-Honey BBQ Chicken Burger

Crispy oven-baked chicken breast, coated in a delicious and sticky Garlic-Honey BBQ sauce, all made into a quick and easy burger. And yes…. This is a Light Bite which means under 500 calories!

Preheat oven to 180°C/ 365°F.
Season butterflied chicken breasts with garlic granules, smoked paprika and salt until coated all over. Dip chicken breast in egg whites, then coat all over with cornflakes. Transfer chicken breasts to a large, lined baking tray - spray with low calorie spray and bake for 25 mins, until crispy.
Meanwhile, add honey, BBQ sauce, lemon juice and garlic granules to a pan and bring to a low simmer. Cook for 2-3 mins before removing from heat.
Once baked, remove chicken breast from oven, then dip each chicken breast in Garlic-Honey BBQ sauce, until coated all over.
Slice brioche buns in half, then add light mayonnaise and add lettuce, followed by Garlic-Honey BBQ chicken.

Serves 4

For the chicken breasts:

  • 2 chicken large breasts - butterflied.
  • 1/2 tbsp of garlic granules.
  • 1/2 tbsp of smoked paprika.
  • Salt, to taste.
  • 2 egg whites.
  • 100g of cornflakes, break some up with hands.

For the rest:

  • 3 tbsp of honey.
  • 3 tbsp of BBQ sauce.
  • Tbsp of soy sauce.
  • Juice of 1/2 a lemon.
  • Tsp of garlic granules.
  • 4 brioche buns.
  • Tbsp of light mayonnaise.
  • Chopped iceberg lettuce.
