Crispy Chicken Caesar Sandwich

Add cornflakes, onion granules, dried parsley, garlic granules, cayenne pepper, salt and pepper to a food processor and blitz to a fine crumb. Coat chicken breasts in plain flour, then dip in egg wash, followed by cornflakes until coated all over. Spray with cooking spray all over, then air fry for 15-18, until crispy all over.
In a medium bowl, whisk together olive oil, anchovy paste, dijon mustard, garlic, lemon juice, Worcestershire sauce, and red wine vinegar. Then add greek yoghurt and parmesan and mix again. Add 1/2 tbsp of water to loosen.
Add half of caesar sauce to a large bowl along with romain lettuce, then mix until combined.
Slice Ciabatta in half, then add caesar sauce, crispy chicken, romain lettuce and top with remaining grated parmesan.

Ingredients

Serves 2

For the Caesar sauce:

  • 1/2 tbsp of extra virgin olive oil.
  • Tsp of anchovy paste.
  • 1/2 tsp of dijon mustard.
  • 1 clove of garlic - finely grated into a paste.
  • Tbsp of lemon juice.
  • 1/2 tbsp of Worcestershire sauce.
  • 1/2 tsp of red wine vinegar.
  • 4 tbsp of 5% greek yoghurt.
  • 10g of parmesan - grated, plus 5g for serving.
  • 1/2 tbsp of water, to loosen.

For the Crispy Chicken:

  • 2 chicken breasts, roughly same size as ciabatta.
  • 2 tbsp of plain flour.
  • 1 egg - beaten.
  • 50g of cornflakes.
  • Salt and pepper, to taste.
  • Tsp of onion granules.
  • A pinch of cayenne pepper.

To serve:

  • 1 ciabatta.
  • Small romain lettuce - washed and chopped.
