Jerk Chicken Sandwich

There is nothing that screams BBQ as much as this Jerk Chicken Sandwich. Juicy chicken thighs that have been marinated in a homemade jerk marinade. Punchy, bold and a little bit of a kick from the scotch bonnet pepper. Unreal.

Add your jerk marinade ingredients to a food processor, and blend to a fine paste.
Add your chicken thighs and jerk marinade to a bowl, mix well. Marinate in the fridge for at least 1 hour.
Whilst your chicken is marinating, this would be a great time to shred your lettuce and red cabbage.
Heat your grill to a high heat and add your chicken thighs. Cook for 5 mins on each side. Use your jerk sauce to baste each side of chicken when flipping.
Build your burger with light mayonnaise on the bottom, then lettuce, then your jerk chicken and then your red cabbage. Put your lid on top and Enjoy!

Ingredients

Serves 4

For the jerk marinade:

  • 4 spring onions - roughly chopped.
  • 1 thumb sized, piece of ginger - roughly chopped.
  • 3 garlic gloves - roughly chopped.
  • 1/2 scotch bonnet pepper - can remove seeds for less heat.
  • 1 Tsp of fresh thyme.
  • 1 Tsp of smoked paprika.
  • 1 Tsp of all spice.
  • 1 Tsp of honey.
  • 500g of chicken thighs.

For the rest:

  • 4 ciabatta rolls.
  • Light mayonnaise, for ciabatta rolls.
  • Jerk sauce, to baste your chicken.
  • Lettuce - shredded.
  • Red Cabbage - shredded.
