Crispy Chilli Chicken Burger
Our Crispy Chilli Chicken Burger is semi-indulgent in terms of calories but fully indulgent in terms of taste and texture. A fiery and super crispy chicken thigh, served with a sriracha mayo, in a toasted bun... delicious!

Preheat oven to 190°C/ 375°F
Firstly, mix together marinade ingredients. Then, add chicken thighs to marinade and stir to coat. For best results, cover and leave to marinade for at least 3 hours.
Mix together batter ingredients until combined. Dip each chicken thigh into batter and toss until coated, then immediately dip in a separate bowl of ice-cold water, then back to batter. Repeat this for remaining chicken thighs.
Get your cooking oil super hot in a pan and then add chicken thighs. Shallow fry in batches of two at a time. Fry each side for 4-5 mins, until golden and crispy, then flip. Transfer to chicken thighs to a baking tray and cook for further 10-15 mins until cooked through.
Meanwhile, mix together sriracha mayo. When chicken thighs are out the oven, serve burger immediately in a toasted bun with cheese slices, lettuce and sriracha mayo.
