Garlic Butter Prawn Linguine
Very garlicky and very buttery prawn linguine. This is comfort food at its finest but it’s also surprisingly light, just 480 calories per portion!

Bring a large saucepan of salted water to boil, then add linguine and cook until al dente.
In a frying pan or skillet, melt your butter on medium-low heat, then add garlic. Sauté for 1-2 u til garlic begins to brown, then add prawns. Toss prawns in garlic butter constantly and cook until prawns are pink (approx 2-4 mins).
Add a pinch of salt, oregano and chilli flakes to prawns and stir to combine.
Once linguine is al dente, drain but reserve a small amount of pasta water. Add linguine to pan and mix using tongs. Then add Parmesan and flat leaf parsley and stir to combine. Finally, add pasta water and season to taste, stir continuously and allow the pasta water to emulsify and create a sauce. Then serve immediately.
