Garlic Steak Mac n Cheese

If you seriously like garlic, steak and Mac n cheese then this dish if for you. Super garlicky, crispy steak bites, served on an equally as garlicky, and indulgent Mac n’ cheese. I love cooking when it’s simple, but effective.

Bring a large saucepan of salted water to the boil and cook the pasta until al dente. Reserve pasta water, just in case you need to add later on.
In a large bowl, coat the steak bites with salt, garlic granules and smoked paprika.
Melt the tbsp of light butter in a large, non-stick pan, then sear the steak bites on high heat, for 3-4 minutes, until brown and charred all over. Add the finely chopped garlic and parsley, toss to combine, then cook for 2-3 minutes, remove the steak bites from the pan.
Reduce the heat to low and melt the remaining tbsp of light butter in the same pan, whisk the flour to combine with the butter, then gradually whisk in the milk to create a sauce, until there are no lumps. Stir in the garlic granules, onion granules, a pinch of salt and black pepper, then add the light cream cheese and finally the cheddar-mozzarella mix.
Once the cheese has melted, add the pasta and toss to combine. If your Mac n cheese needs loosening, add a splash of pasta water.
Check if your steak bites need reheating slightly (if they do, they’ll only need 30 seconds in the microwave), then serve the steak bites on top of the Mac n cheese. Garnish with fresh parsley.

For the Garlic Steak Bites:

  • 1 sirloin steak - cut into bite-seized pieces.
  • Salt, to taste.
  • Tsp of garlic granules.
  • Tsp of smoked paprika.
  • Tbsp of light butter, I used Lurpack lighter.
  • 2-3 cloves of garlic - finely chopped garlic.
  • A handful of fresh parsley - finely chopped.

For the Garlic Mac n Cheese:

  • Tbsp of light butter, I used Lurpack lighter.
  • Tbsp of plain flour (add 0.5 tbsp more if sauce needs thickening).
  • 300ml of low-fat skimmed milk.
  • 2 tbsp of light cream cheese.
  • Tsp of garlic granules.
  • Tsp of onion granules.
  • 100g of light cheddar & mozzarella mix.
  • 150g of macaroni or spiralli pasta.
  • Fresh parsley, to garnish.
