Three Cheese Cauliflower Cheese

Our Three Cheese Cauliflower Cheese is out of this world! We've also teamed this up with crispy chorizo and garlic rosemary breadcrumbs. This is definitely one to make for the big day.

Preheat oven to 200°C/ 400°F.
Bring a medium saucepan of water to boil, then chop and wash cauliflower. Transfer cauliflower to a steamer and place on saucepan of boiling water. Steam cauliflower for 7 mins. You may need to do this in two batches.
Grate all your three cheeses.
Meanwhile, melt butter in a stainless steel pan or skillet on low-medium heat, then whisk in plain flour to create a roux. Gradually whisk in milk until you are left with a white sauce with no lumps.
Add wholegrain mustard and smoked paprika, then stir in three cheeses until melted. Season to taste with salt and pepper, then add cauliflower and stir to coat. Set aside on low heat whilst preparing breadcrumbs.
In a separate non-stick pan, heat olive oil on medium heat and crush garlic into pan. Sauté for 1-2 mins, before adding rosemary, sauté for 1 min, then add breadcrumbs. Fry breadcrumbs until crispy and golden brown, then remove from heat.
Transfer cauliflower cheese to a baking dish, top with Garlic Rosemary Breadcrumbs and chorizo crumbs, then bake for 15-20 mins.


Serves 4

For the Cauliflower Cheese:

  • 1 cauliflower.
  • 20g of unsalted butter.
  • 2-3 tbsp of plain flour.
  • 0.5L of semi-skimmed milk.
  • Tsp of wholegrain mustard, or to taste.
  • 1/2 tsp of smoked paprika.
  • Three cheeses (sub for own choices): 50g of vintage cheddar, 50g of Gruyere, 50g of Red Leicester.
  • Salt and pepper, to taste.
  • 50g of chorizo crumbs.

For the Garlic Rosemary Breadcrumbs:

  • Tbsp of extra virgin olive oil.
  • 100g of breadcrumbs.
  • 1 clove of garlic - crushed.
  • 1 sprig of rosemary - finely chopped.
