Gingerbread Biscoff Truffles

Add gingerbread biscuits to a food processor and blitz into a fine crumbs. Then, add light cream cheese, tbsp of Biscoff spread and vanilla protein and blitz again until you are left with a sticky dough.
Pour mixture out onto a surface and divide into 16 balls, roughly 20-25 grams per ball, then chill in fridge or freezer for 15-30 mins, until firm.
Microwave white chocolate in a bowl for 20 second intervals until completely melted. Dip each truffle in white chocolate, using a fork to coat all over, then transfer to a lined baking tray.
Melt remaining tbsp of Biscoff and then drizzle over truffles to decorate. Top with some Biscoff or gingerbread crumbs.
