Hash Brown Shakshuka

We absolutely love a Shakshuka at TGB and we've taken this one a step further by adding a cheesy hash brown, resulting in a dream of a brunch option.

Preheat oven to 200°C/ 400°f. Place hash browns on a baking tray and bake for roughly 15 mins, until crispy, then remove from oven and set aside. Leave your oven on for later.
Heat olive oil in an oven-proof pan, then deskin and break up sausage meat into pan. Cook for 5 mins, stirring regularly, until it begins to brown and is cooked through, then remove from pan.
Add onion and pepper to pan and cook for 3-4 mins until soft. Add garlic and chilli and continue to cook for 1-2 mins, stirring regularly. Add your chopped tomatoes and passata (this could just be two tins of chopped tomatoes), as well as your cooked sausage meat back to the pan. Add cumin, smoked paprika, oregano and red wine vinegar and give it a good stir, bring the pan to a low simmer and cook for 15 mins.
Once sauce has thickened, season to taste and stir in fresh basil. Create 4 wells in your tomato sauce and place your eggs in the wells. Add in your baked hash browns, top with cheddar slices and then bake your Shakshuka for 5 mins, until egg whites are cooked, but yolks are still runny.
For the smashed avocado, add avocado, olive oil, chilli flakes to a small bowl and mash it all together using the back of fork. Serve it all with some toasted sourdough for the perfect brunch meal!

Serves 4

For the Shakshuka:

  • 4 hash browns.
  • Tbsp of extra virgin olive oil.
  • 4 Heck sausages - any brand of sausages will be fine but Heck are slightly healthier.
  • 1 onion - finely chopped.
  • 1 red bell pepper - diced.
  • 3 cloves of garlic - finely chopped.
  • 1 red chilli - finely chopped.
  • 1 tin of chopped tomatoes.
  • 400g of passata (this can be swapped for another tin of chopped tomatoes).
  • Tsp of cumin.
  • Tsp of smoked paprika.
  • Tbsp of oregano.
  • Tbsp of red wine vinegar.
  • A handful of fresh basil - chopped.
  • 4 golden yolk eggs.
  • 4 hash browns.
  • 4 small slices of light cheddar, for hash browns.
  • Salt and pepper, to taste.

For the smashed avocado:

  • 1 large avocado.
  • Tsp of extra virgin olive oil.
  • Tsp of chilli flakes.
  • Salt and pepper, to taste.
