High Protein Biscoff Brownies

Gooey, fudgey, High Protein Biscoff Brownies... we’re pushing the boat out for Easter with these! They are a must try.

Preheat oven to 175°C/ 350°F.
In a large mixing bowl, mix together banana, peanut butter, vanilla whey protein and cocoa powder until fully combined and smooth.
Transfer your mixture to a lined loaf tin or 8”x8” baking tin (loaf tin will achieve a deeper, taller brownie). Break 3 Lotus biscuits in half then insert into brownie mixture, roughly halfway down loaf tin, then cover biscuits with brownie mixture using a spatula. Bake brownies for 10-12 mins, 11 mins seems to be the sweet spot!
Once baked, remove from oven and leave to cool for at least 5 mins. Add Biscoff spread to a bowl and microwave for 30-40 seconds until runny. Pour melted Biscoff across brownies and spread using a spatula. Finally, decorate top with remaining broken up Lotus biscuits and biscuits crumbs. Slice into 12 brownies bites.

  • 3 bananas - mashed (I even stick-blended mine for a smoother mixture).
  • 200g of smooth peanut butter.
  • 2 scoops of vanilla whey protein (can be vegan).
  • 3 tbsp of cocoa powder.
  • 6 lotus biscuits, half to insert into brownies, half for decorating.
  • 2 tbsp of Lotus Biscoff spread.
