Preheat oven to 200C/400F.
To a large baking dish, add your red pepper, red onion, 1 tbsp olive oil and season well. Bake for 30 mins.
Once baked, add red pepper, red onion, 3 tbsp olive oil, paprika, oregano, garlic, juice of 1 lemon, basil, chillies and red wine vinegar to a food processor or blender and blitz until smooth.
If your sauce needs loosening up a little but then add splashes of water. And there you have your homemade peri peri sauce!

For The Peri-Peri Sauce

  • 2 sweet red pepper - roughly chopped.
  • 1 red onion - roughly chopped.
  • 4 tbsp Extra Virgin Olive Oil.
  • Tbsp of Paprika.
  • Tbsp oregano.
  • 3 cloves of garlic.
  • Juice of 1 lemon.
  • A handful of fresh coriander.
  • Small bunch of fresh basil - chopped.
  • 2 red chillies - chopped (or you can use dried bird’s eye chillies, as I did!)
  • 1 tsp of red wine vinegar.
