Chicken Gyros

Our Chicken Gyros are the perfect summer BBQ recipe to enjoy with friends or family. Tasty Greek inspired marinated chicken thighs, homemade tzaztiki and veg, all rolled into a delicious kebab... did I mention healthy and on point macros too?!

Mix together marinade ingredients until fully combined. Then add chicken thighs, mix until chicken thighs are coated, then leave to marinade for at least 30 mins.
For the tzatziki, grate 1/2 a cucumber then drain liquid from cucumber by squeezing with your hands. In a small bowl, mix together all tzatziki ingredients until fully combined.
Time to build your skewers, add one piece of onion and pepper in between each piece of chicken thigh, you should aim to make four skewers.
Now, time to grill. I cooked mine on a BBQ for about 10 mins each side when coals were hot, but the heat of your BBQ will vary, so monitor and make sure they’re cooked through before eating! If you’re using an indoor cast iron then cooking may be quicker.
To build your Gyros, warm the flatbread, then spread a little tzatziki on flatbread, followed by lettuce. Cut chicken directly from skewers from top to bottom over flatbread, leaving the chicken to fall directly onto flatbread. Top with onions, tomato and cucumber mixture and more tzatziki and enjoy!

Serves 4

For the marinade:

  • 100g of greek yoghurt.
  • Tbsp of extra virgin olive oil.
  • 5-6 cloves of garlic - finely chopped.
  • Juice of 1/2 a lemon.
  • Tsp of cumin.
  • 1/2 tsp of smoked paprika.
  • 2 Tbsp of oregano
  • Tsp of coriander.
  • Tsp of ground black pepper.
  • 1/2 tsp of salt.

For the skewers:

  • 500-600g of boneless, skinless chicken thighs - cut in half.
  • 2 onion - chopped.
  • 2 peppers - chopped.

For the tzatziki:

  • 200g of greek yoghurt.
  • 1 clove of garlic - finely chopped.
  • 1/2 a cucumber.
  • 1/2 a lemon juice.
  • 1/2 tsp of cumin.
  • A handful of fresh parsley - chopped.
  • Salt and pepper, to taste.
