Lemon Garlic-Butter Kebabs

Super garlicky and buttery with a citrus kick... our Lemon Garlic-Butter Kebabs are amazing. Lower calorie but packed full of flavour and goodness - everything we want our Light Bites series to be about.

Preheat oven to 180°C/ 365°F.
Add all kebab ingredients to a large bowl and mix until combined. Add chicken to 4 skewers, then place on a roasting rack (if you have one) within a baking tray and bake for 20-25 mins. Alternatively, you can air fry kebabs for 15 mins.
Meanwhile, in a medium bowl, mix together your lemony dip ingredients until combined.
When kebabs are out the oven, add low-fat butter and clove of garlic to a small bowl and microwave for 30-45 seconds, creating your garlic butter, then brush kebabs all over with garlic-butter.
Now you’re ready to serve. Make your flatbreads or box up with white rice for meal prep!

Serves 4

For the kebabs:

  • 600g of chicken breast - diced.
  • 50g of fat free yoghurt.
  • Tbsp of extra virgin olive oil.
  • 3-4 cloves of garlic - finely chopped.
  • Juice of 1 lemon.
  • Tbsp of cumin.
  • 1/2 tbsp of smoked paprika.
  • 1/2 tbsp of oregano.
  • 1/2 tsp of chilli flakes.
  • Salt and pepper, to taste.

For the Lemon-Herb Dip:

  • 75g of fat-free yoghurt.
  • Juice of 1/2 a lemon.
  • Black pepper, to taste.
  • 1/2 tsp of cumin.
  • 1/2 tbsp of oregano.

For the garlic-butter:

  • 30 of low-fat butter, such as Lurpack Lighter.
  • 1 cloves of garlic - finely chopped.

To serve:

  • 4 flatbreads or white rice.
  • Lettuce - chopped.
  • 4 tomatoes - chopped.
  • 1 cucumber - chopped.
