Preheat oven to 200°C/ 400°F.
Start by slicing your bread into 6 medium slices. Then cut your 200g block of Castello Extra Creamy Brie into 12 triangles.
Lightly toast your sourdough and butter it to your preference. Add 1 tbsp of cranberry sauce to each slice of sourdough and spread it out. To each bottom slice of toast, add 4 triangles of your Castello Extra Creamy Brie, a handful of red onion slices and 1 slice of ham. Add your top slice to make your toastie.
Add the tbsp of butter to a large skillet or frying pan and heat until melted. Fry each toastie for 3-4 minutes on each side.
Place each toastie on a baking tray and top with 25g each of the grated Castello Tickler Extra Mature Cheddar. Bake in the preheated oven for around 5 minutes!
