Lay chicken breast on a flat surface, then carefully cut a pocket into each chicken breast (make the pocket as deep as you can without breaking through the chicken breast). Drizzle a small amount of olive oil over each chicken breast, then coat in cajun seasoning.
Heat remaining tbsp of olive oil in a non-stick pan and add onion and pepper. Cook onion and pepper for 5 mins until soft then add N’duja. Break up the N’duja and stir regularly as it cooks and releases its oil. Cook for another 3-4 mins until N’duja begins to turn crispy, then remove from heat.
Stuff each chicken breast with N’duja filling and cheddar, then transfer to a lined baking tray. Bake chicken breast for 20-25 mins. Serve with some cous cous and kale.

  • 3 chicken breasts.
  • 2 tbsp of extra virgin olive oil.
  • 1/2 an onion - finely chopped.
  • 1/2 a red pepper - finely chopped.
  • 80g of N’duja.
  • 50g of mature cheddar - grated.
  • 2-3 tbsp of cajun seasoning.
