Preheat oven to 190°C/ 375°F.
Heat olive oil in non-stick pan and add chicken. Add cajun seasoning to chicken and cook for 5 mins, until chicken is cooked through, then remove from pan and set aside.
Boil a saucepan of water and steam your kale for 3-4 mins.
Add pizza sauce to flatbread, then your toppings: chicken, N’duja, red onion, mozzarella , red chilli, oregano. Bake your flatbread for approx 10-12 mins.
Meanwhile, lightly toast your pine nuts. Once flatbread is baked, remove from oven , then add kale, toasted pine nuts and honey.
