10 Min Chow Mein Noodles

Chow Mein noodles that take 10 mins to make?! These are delicious, veggie and high protein. They also work perfectly hot and cold, meaning they are the perfect for packed lunches.

Firstly, prep your veg.
Bring a large saucepan of water to boil and add your noodles. Once noodles are added, turn off heat but leave noodles to soak in water for 3-4 mins. Transfer noodles straight to a large bowl of cold water, this will stop the cooking process, then transfer to a separate bowl.

Heat tsp of groundnut oil in a large wok, then add eggs. Scramble eggs until cooked, then remove from wok.
Wipe down wok and heat remaining 1/2 tbsp of sesame seed oil in wok. Add carrots and white cabbage, stir fry for 3-4 mins, until veg is soft but still crunchy, then add in noodles and cooked egg. Stir to combine then serve immediately or box up for packed lunch. Garnish with spring onion and sesame seeds.

Serves 4

For the noodles:

  • 3 nests of noodles.
  • 1/2 tbsp of sesame seed oil.
  • 1-2 tbsp of soy sauce.
  • Tbsp of rice wine vinegar.
  • 1/2 tsp of Chinese five spice.
  • 1/2 tsp of white pepper.

For the rest:

  • 4 spring onions - finely chopped.
  • 2-3 carrots - thinly sliced.
  • 1/4 white cabbage - thinly sliced or shredded
  • 4 eggs.
  • Tsp of groundnut oil.
  • 1/2 tbsp of sesame seed oil, for stir fry.
