Cover chicken breasts with parchment paper and bash down to flatten using a rolling pin or mallet.
Mix together marinade ingredients, then add to chicken breast and mix well.
Heat a cast iron pan or griddle (griddle is better) to high heat, add a tiny bit of cooking oil just to grease the pan and avoid sticking, then place chicken breasts on griddle. Cook for 4-5 mins until chicken breast show chargrilled line across them, then flip and repeat. Make sure chicken is cooked through before removing from pan.
Add all salsa ingredients to a bowl and mix well. It's now time to build your burger!
Build your burger with light mayonnaise on the bottom, then lettuce, then chicken breast, then a slice of light cheddar and top it off with your delicious fresh salsa. Enjoy!
