Preheat cast iron griddle until very hot. You could use any type of pan instead, but won’t get the grilled markings if you don’t use a griddle.
Cut peaches in half and remove stone, then cut each half in half again. Lay peaches out onto a baking tray and brush both sides of peaches with melted coconut oil. Transfer 4 peach slices at a time to cast iron griddle and cook for 3-4 mins, until peaches are soft and you can see the griddle markings, then flip and cook the other side.
Serve grilled peaches immediately and add protein yoghurt, then garnishes on top and enjoy!

For the Peaches:

  • 4 peaches, make sure they’re nice and ripe!
  • Tbsp of coconut oil -melted.

For the Protein Vanilla Yoghurt:

  • 200g of 0% fat greek yoghurt.
  • 1 scoop of vanilla whey protein.

To garnish:

  • A handful of flaked almonds (10g).
  • Tbsp of brown sugar.
  • Tbsp of maple syrup.
