Oatmeal and Berries Bake

Delicious and probably one of the healthiest yet tastiest sweet baked treats. Perfect as a good healthy dessert or breakfast option!

Firstly, preheat your oven to 180C/350F.
Then, in a large mixing bowl, add your oats, coconut, cinnamon, nutmeg & salt and mix well before setting aside.
Next, in another mixing bowl, add almond milk, maple syrup, 1 tbsp of coconut oil, egg and vanilla and mix well.
Now, add your oats mixture to the wet mixture and mix well.
Then, lightly grease your baking dish with a tbsp of melted coconut oil and add half of your blueberries and raspberries. Mash your berries, don’t worry if they aren’t all completely mashed and then add your oats mixture on top fo the berries.
Flatten your oats out to create an even surface and add the remaining berries to the dish.
Bake in the oven for 40 mins before removing and allowing to cool before serving. Serve with a drizzle of maple syrup.

  • 225g of rolled oats
  • 30g of desiccated coconut
  • Tbsp of cinnamon
  • Tsp of nutmeg
  • A pinch of salt
  • 600ml of almond milk
  • 80g of maple syrup
  • 2 tbsp of 100% coconut oil (1 for recipe and 1 for greasing)
  • 1 egg
  • Tsp of vanilla paste or extract
  • 250g of blueberries
  • 250g of raspberries
