Raspberry & Oat Breakfast Bars

These are a delicious and amazing snack to have ready to go, using whole foods and super healthy ingredients. And perfect for any time of the day, not just breakfast.

Preheat oven to 175°C/ 350°F.
Add all dry ingredients to a large bowl and mix together until fully combined.
Mix together all wet ingredients until fully combined, then add wet mixture to dry mixture and mix until fully combined.
Transfer to a lined 8x8” baking tray and flatten using a spatula.
Decorate the top with chopped almonds, chia seeds and raspberries, then bake for 30 mins.
Once baked, remove and leave to cool before slices into 16 slices.

For The Dry Ingredients

  • 300g of rolled oats.
  • 75g of coconut sugar
  • Tsp of baking powder.
  • Tsp of cinnamon.
  • 30g of almond - chopped, plus some more to decorate.

For The Wet Ingredients

  • 2 eggs.
  • 1 banana - mashed.
  • Tsp of vanilla.
  • 125ml of milk.

To Decorate

  • Two handfuls of almonds - chopped.
  • Tbsp of chia seeds.
  • 50g of raspberries - chopped.
