Spicy Chicken Noodles

Our Spicy Chicken Noodles are super easy, hot and super tasty! Perfect to knock up midweek if you’re in a rush but want a satisfying dish that is full of flavour.

In a medium bow, mix together chicken, garlic granules, onion granules, smoked paprika.
Bring a large saucepan of water to boil and add noodles. Cook according to packet instructions - when cooked, drain then add to a large bowl of cold water to stop the cooking processing. Leave them to sit whilst you cook the rest of dish.
Heat tbsp of groundnut oil in a non-stick pan and add chicken breast. Cook for 5-10 mins, until charred on the outside and cooked through, then remove from pan.
Add onion to pan and cook until soft, stirring regularly, before adding garlic, ginger and spring onions - cook for 2 mins, then add red chilli and cook for 1-2 mins. If things get too dry, then add a splash of oil to pan.
Add cooked noodles and chicken to pan and stir to combine. Then, add soy sauce, honey and chilli oil and stir to combine. Taste for seasoning, then you’re ready to serve. Garnish with red chilli, spring onions and peanuts.


Serves 2

For the chicken:

  • 400g of chicken breast - cut into 2-4cm pieces.
  • Tsp of garlic granules.
  • Tsp of onion granules.
  • 2 tsp of smoked paprika.

For the rest:

  • 200g of udon noodles.
  • 1 onion - thinly sliced.
  • 2 cloves of garlic - finely chopped.
  • 2 inch piece of ginger - finely chopped.
  • 3 spring onions - finely chopped.
  • 1 red chilli - thinly sliced.
  • 2 tbsp of soy sauce.
  • Tbsp of honey.
  • 1/2 tbsp of crispy chilli oil.

To Garnish:

  • 1 red chilli - finely chopped.
  • 1 spring onion - finely chopped.
  • 20g of peanuts - finely chopped.
