Bring a large saucepan of water to boil and mix together sweet chilli sauce ingredients in a small bowl.
Heat a few sprays of fry-lite in a non-stick pan and add beef mince. Season to taste, then fry beef mince for 4-5 mins, stirring regularly and until brown all over.
Move beef mince to one side of pan and add shallot and garlic to the space you just created with the pan. Allow shallot and garlic to fry for 1 min, then stir to combine with beef mince, then add bell pepper.
Meanwhile, add sweet chilli sauce to beef mince and stir to combine, bring sauce to a low simmer whilst you cook the egg noodles.
Add egg noodle nests to boiling saucepan of water and turn heat off. Allow to egg noodles to soak for 1-2 mins, until soft, then transfer directly to beef mince in sweet chilli sauce. Toss everything to combine. 
Serve immediately, or box up for meal prep. Garnish with red chilli slices.

For the Noodles:

  • 1 red bell pepper - thinly sliced.
  • 2 red chillies - thinly sliced.
  • 3 cloves of garlic - finely chopped.
  • 400g of 5% fat beef mince
  • Fry-lite or low-calorie cooking spray.
  • 4 nests of egg noodles.

For the sweet chilli sauce:

  • 2 tbsp of soy sauce.
  • Tbsp of rice wine vinegar.
  • 2 tbsp of ketchup.
  • 2 tbsp of chilli jam.
  • Tbsp of honey.
