Remove skin from your sausages and transfer meat to a bowl. Mash together your sausage meat until combined then divide into two separate balls. Shape your sausage meat into two thin patties either just using your hands or ring moulds then set aside.
Heat some cooking spray in a non-stick pan then place sausage meat in their moulds in your pan. Remove ring moulds and cook patties for 4-5 mins on each side. Meanwhile, fry your halloumi in the same pan, until golden and slightly crispy. Using an egg mould, fry your egg for 3-4 mins.
Toast and butter your muffins, then build your McMuffin: halloumi first, then sausage patty, chilli jam, egg and then lettuce.

  • 2 Heck Sausages - or other healthy sausage options.
  • 4 thin slices of halloumi.
  • 2 eggs.
  • Low calorie cooking spray, for frying.
  • 2 tsp of chilli jam.
  • 2 muffins, for toasting.
  • 2 lettuce leaves.
