Drizzle garlic infused olive oil evenly onto sourdough, then trainsfer to a cast iron skillet or frying pan and toast on medium heat 2 mins on each side.
Meanwhile, carefully cut avocado into thin slices.
Once sourdough is toasted and showing colour, remove from heat and add chorizo to the same pan. Cook chorizo for 1-2 mins, until crispy, then remove from pan add pat dry on a paper towel. Finally, crack your egg into pan and cook for 2-3 mins, then remove.
Rub clove of garlic on sourdough for an extra garlicky flavour, then place avocado on sourdough. Gently push avocado to separate and flatten the slices, then smash with the back of fork.
Add chilli flakes, then add fried egg and chorizo to sourdough. Finally, garnish with small amount of dried parsley and chilli oil.
